Fresh anchovies from the Cantabrian Sea (Engraulis encrasicholus) seasonally fished during the “Spring Campaign” from March 1st to June 30th following the old Basque fishing tradition. In this period the anchovies are in their best features, in an excellent balance between meat and fat. The fresh fish is packed locally, never frozen. Then it is refrigerated until the moment it is shipped to the customer. Olasagasti is committed to fishing sustainably, only during season and limiting its production to allow for a healthy replenishing of the species.
